I have discovered a new tasty recipe for my family; Lasagna Rolls. They are pretty yummy and not hard to make. They are not the quickest things to make, but definitely stress free when it comes to the shopping and making of them.

All you need is...

1 Package of lasagna noodles
2 Cups mozzarella
1 (15 ounce) Ricotta Cheese
1 (8-10 ounces) thawed and chopped spinach
1 (28 ounce) Pasta Sauce Jar
1 TBS Oregano
1 1/2 tsp Basil
Salt & Pepper
1/2 small onion2. In large bowl mix together mozzarella cheese, ricotta cheese, chopped spinach, onions, oregano, basil, some salt and pepper (salt & pep to your taste)
3. Lay out noodle flat and spread a thin layer of cheese mixture evenly. Then spread a thin layer of pasta sauce. Roll noodle up and place in pan (9x13), seem down.

4. When all noodles are rolled in pan, sprinkle salt over the bare noodles. Then top the remaining pasta sauce over the noodles. If you have any cheese mixture left over, plop a little dab on each noodle. I always like to sprinkle any left over mozzarella cheese too.

5. Bake in oven at 350* for 30 mins or until hot an bubbly.

P.S. I didn't have 2 cups of mozzarella when I made this. I only had about 1 cup, but it still tasted great! It was only my husband and I who ate this, but it seems to feed 6 people pretty good, especially if you have a salad or bread with dinner.
If it feeds 6 people & it was only the two of you I should imagine that you ate pretty well! Sounds delicious, we might have to give this one a go.

ReplyDeleteYou are so awesome. Sadly, boiling lasagna noodles is not a talent I posess. I can always boil up a big sticky mass of noodles but it is never good for anything but dumping sauce on and calling a bloody octopus.

Mmmmm, my mom made this for years but used chopped broccoli (frozen) in place of spinach. It is a great meal! A little messy to make but lasts a long time and is very filling.

I have made a similar recipe in the past which is even easier . . .same idea but using frozen cheese ravioli, frozen thawed spinach, grated cheese, sauce . . layer as you like (I add ground meat). It's a great, quick meal to have at home or send to a new mom as you can have ingredients on hand and throw together at a moments notice. The disposable baking pans are a great thing to have on hand too.
ReplyDeleteYUM! I love lasagna and have never tried making something like this. Actually I just love all types of pasta/Italian food. Oh and cheese. Oh and red wine. It's a wonder I don't weigh 400 pounds.

I've made lasagna rolls before, using a recipe from Giada De Laurentiis.
ReplyDeleteHer tip is to add just a tiny bit of olive oil (1-2 tbsp) to the water when you're boiling the lasagna noodles - they won't stick together, and they're much easier to work with.

I have a recipie very similar to this but I use the big pasta shells and stuff them. One good thing about the shells is I never boil them first they cook as I bake it.
