I don't know if it is the sugar /grease/carb rush that I am on right now from all the holiday food I ate today... but I am posting another baked good full of calories, sugar, and .... wait... uhhhhhh... I mean..... a wonderful calorie-FREE, fiber-filled, organically made cookie! Can you believe it?!?! (I hope not)
It has been awhile since I have made these, but I remember really liking them and my husband REALLY liking them. I definitely remember him eye-balling the cookies more than me that week. So, if you are trying to get your husband to spend more time in the kitchen, then maybe you should try these Chocolate Chocolate Chip Cookies. All you need is...
1 cup butter, softened
1.5 cups white sugar
2 tsp vanilla extract
2 cups all-purpose flour
2/3 cup cocoa powder
3/4 tsp baking soda
1/4 tsp salt
2 cup semisweet chocolate chips
1/2 cup chopped walnuts (this is optional for people who like nuts... I am not a fan so I always leave them out)
1. Preheat oven to 350*
2. In large bowl, beat butter, sugar, eggs and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips and walnuts. Drop by rounded tsps onto ungreased cookie sheets.
3. Bake for 8-10 mins, let cool slightly before moving, then wait for cooling completely.
