Zesty Broth Rice

I have been trying to get better at making sides with dinner. I like to cook, but I am also kind of lazy.... I will make the main meal... and yea... that is about it. :) So, I have been trying to get better and while trying to get better, I made a really yummy rice recipe. All you need is...

1 cup White Rice
1 can Broth (chicken or veggie, I used veggie)
Green Onions
Fat Free Zesty Italian Dressing
1/3 cup Asiago Cheese (optional)

1. Put the amount of rice that you are wanting in your rice cooker. Put in broth, NOT WATER. Add broth 2 to 1 with the rice (meaning... 1 cup rice = 2 cups broth). Add in 1/2 cup of Italian dressing, and if you are making more less than 1 cup rice, then just add the amount you think.

2. Once rice is done put into bowl. Now add green onions, about 3 full stocks. Also add asiago cheese (desired amount) and some more Italian dressing, just enough to make the rice have a more wet, fluffy, texture.

3. DIG IN!

This was a big hit with my husband and was a yummy simple side. I am not a huge fan of rice and I was gobbling this up. So, hopefully you will all enjoy this as much as we did.

  2. My kids love rice cooked with stock (broth) instead of water -but I've never added dressing to it before - I'll have to try that. P.S. Adding stock instead of just water to rice also makes an amazingly yummy variation on couscous too.

I love rice, it is a staple in our house. i am just as bad with side items, especially when i am pregnant, it is all i can do to put a real meal on the table. well first of all i freeze EVERYTHING. but i use frozen veggies and beans and sometimes i cook 2x as much so we can use it a few days later and i dont have to put forth the effort again.

  7. This looks delish! I love rice, so I'm sure I'd love this. And I love that it doesn't use any meat...I'd eat a whole bowl of this for dinner. :) I usually don't like rice made with broth (weird, I know), but I think the dressing would change my mind!

  9. My husband is Brasilian, so rice is a staple at our house. I never thought to cook it in broth! That should make a nice variation from the same old rice we eat all the time (well, that my family eats- I can't have rice. 'tis a shame).
