Cheeseburger Soup

I am not much of a soup person. I don't know why, but they have never
really done "it" for me. Well, I should say, they have never really done "it" for me, until I discovered the holy grail of soups called.... Cheeseburger Soup.

My friends mom introduced it to me a few years ago and I finally hunted down the recipe and have been enjoying it ever since. It is absolutely amazing! It is filling, without being heavy, also very flavorful, creamy, and everything else you could want. So, as you can tell.... I like this soup.

It has quickly become a favorite in our family and if you are looking to introduce it to your minions... I mean...um... children, then all you need is...

• 1 ½ cup water
• 2 cups peeled and cubed potatoes
• 2 carrots, peeled , chopped
• 1 small onion, chopped
• 1 jalapeno pepper, seeded and minced
• ½ teaspoon salt
• 2 cubes beef bouillon, crumbled
• 1 pound ground beef
• 1 clove garlic, minced
• 2 ½ cup milk, divided
• 3 tablespoons all-purpose flour
• ½ pound processed American Cheese, cubed
• ¼ teaspoon cayenne pepper

1. In a large saucepan over medium heat, combine water, potatoes, carrots, onion, jalapeno and garlic. Sprinkle salt and bouillon over the mixture. Bring to boil, then reduce heat, cover and simmer 15 to 20 mins, until potatoes are tender.
2. Meanwhile, in a large skillet over medium heat, cook beef until brown, drain.
3. Stir cooked beef and 2 cups milk into the soup and heat through. Combine remaining ½ cup
milk with flour, stirring until smooth; stir into the soup. Bring to a low boil and cook, stirring, until thickened, 3 mins
4. Reduce heat to low and stir in cheese until melted. Season with cayenne and serve!

TIP: For the jalapenos I usually buy the canned diced jalapenos and just use a TBS of that. We like ours spicy so sometimes we do 2 TBS. If you are worried that it will be too much for children... though I don't think 1 TBS will be... just make sure that there are no seeds. It is mainly the seeds that add the REAL hotness. So, just look out for those before you throw any peppers in and you should be safe.

  3. Wow. I am definitely trying this one, maybe tonight. I love simple delicious recipes that use mainly things I already have in the house. (Can you tell I'm not the most organized of sahms) The only thing I don't have is the jalapenos. I think my kids might love this and hubby too. Thanks! (Go Redwings. thanks for the prayer.   4. Just last week we had cheeseburger soup in our home. Yep, my 2-year-old took half of his cheeseburger and put it in his water.

    This version looks MUCH better :)

  17. This sounds so good. I will have to try it, but not till it cools down. We do A LOT of hamburger/hot dogs/grilled cheese in the summer. It is just too hot.

  20. Have you ever tried freezing this? My friend is having a baby and this sounds like a perfect meal to take over to her before the baby is born (to keep in her freezer when she is too tired to cook)!

  21. I wanted to tell you I made this last night and it was so yummy! I used diced green chiles instead of jalapenos (my kids don't appreciate jalapenos like hubby & I do) and it was still great.
