Congo Sqaures - Blondies

My mom was always really sweet with baking treats and goodies for us kids. One of my favorite treats was Congo Squares, a yummy mixture of a chocolate chip brownie. (I have also heard them called Blondies) Sounds yummy? Yea, I know! If you now have the itch to bake these little guys, all you need is...

3/4 cup butter, melted
2 1/4 cups packed brown sugar
3 eggs
2 3/4 cups all purpose flour
2 1/2 teaspoons baking powder
1/2 tsp salt
2 cups semi-sweet chocolate chips
1 TBS vanilla extract

Directions
1. Preheat oven to 325* degrees.
2. In large mixing bowl, combine butter and brown sugar; cool slightly. Beat in eggs, one at a time. In a separate bowl, combine flour, baking powder, and salt; add to sugar mixture and mix well. Stir in chocolate chips.
3. Pour batter into a 9x13 pan. Bake for 25 - 30 mins. When completely cool, cut into squares.
4. These can seem gooey if you don't let them cool AND set. I actually think they taste best the next day or at least a couple hours later. If you over cook them, they will look done, but then they will set hard and crunchy. So, even if they seem a little gooey try and trust them :)

I hope they turn out as good as when my mom makes them... because they are gooooood :) These are seriously my #1 favorite baked good.

  1. Those sound VERY yummy!!! I may have to try them. Are they really chocolatey? I don't like tooooo much choc in something like that. They didn't appear to be!

  3. Although they do look good and sound yummy, I'm a purist. I tend to like my browies fudge with no nuts or chips. I may have to ask the family what they think.

  18. hey melissa, can I borrow some chocolate chips so I can make those brownies? hahaha They sound really yummy, it's sunday, and I don't have any chocolate chips. And I went to your blog for the first time ever and now I have to make those....great...ah fa cryin' out louD!!! I guess i'll have to make them for FHE instead when I can get some chocolate chips!!   25. OMG!!!! I have never heard of anyone else who knew about these! My great-grandmother used to bake them all the time. I bake them for every party and everyone raves about them. We called them Congo Bars.

  26. OHMYGOSH!!! I GREW UP ON THIS RECIPE!! We called them Congo Bars. Anytime I go to visit my mom, she'll ask if I want her to make a pan of Congo Bars. Oh, heaven...HEA-VEN!

  27. I finally got around to trying this recipe this week and had a question for you - mine were really gooey and I cooked for the full 30 minutes - can you offer any advice. They did get eaten in a hurry, but we told everyone they were chocolate chip cookie dough bars (hehe).

  29. I always have to cook them a little longer then they say... but I thought that was just my oven. If they turn out gooey cook them a little longer.... but I always find they really need to set up... you can't just eat them when they cool down... wait for a couple hours.
