Cupcake Bites

Usually I post a craft project on Tuesdays and fun recipes on Saturdays, but today is different.... today is crafty food! WOW!.... Can you handle that!?! I tried this wonderful recipe that I found through Scribbit on Bakerella's blog. (did you follow that?) and it is just to die for. It is a candy cupcake... yep.... candy AND a cupcake... Cupcake Bites. They are super fun to make and really easy. It may require buying a few items, but those are inexpensive. All you need is...
.
A candy mold
1 box cake mix (red Velvet or devil chocolate are good)
1 can cream cheese frosting
1 package chocolate bark (for the cupcake's bottoms)
Colored Candy Melts or white chocolate and dye to color (for cupcake top)
Sprinkles and M&Ms for decorations

1. Bake the box cake as the instructions state. When finished, take out to cool. Once cooled, start to crumble the cake up into a bowl, let it then cool completely.
2. Now, take the can of frosting and mix it with the crumbled cake. It should come out looking fluffy and spongie-ish. This is the reason why you want to make sure the cake is cooled, because if it isn't, it will melt the frosting too much and the batter wont be very moldable.
3. Now roll the batter into quarter size balls. When finished, put the balls into the freezer to chill well, but not frozen.
4. Now you can take your chocolate bark and get it melted and start to fill the candy molds. Don't fill them too much... probably about 1/2 to 3/4 full. Once the chocolate is poured into the candy molds, take a batter ball and push it into the chocolate. I find it tastes better when you push them almost the whole way in. Just make sure they don't hit the bottom, but close :)
5. When your candy mold tray is filled, place it into the fridge or freeze to set the chocolate. When they are set pop the candy balls out.
6. Now melt the colored candy melt or the white chocolate (which ever you used, we used white chocolate with food dye). Hold the candy call by the butt and dip it into the melted candy melts to give the nice top.
7. Decorate with sprinkles, M&Ms, or whatever you like.
8. Enjoy

They make a bit, around 50-70 and are super good. They even get better with each day that goes by. When we did this recipe I thought the best tasting ones where the bites that weren't too big and were fairly close to the bottom. I didn't like the cupcake bits that had a super thick chocolate bottom; it made it too hard to eat them. But try out this fun recipe... you will feel crafty and bakey all at once.... is bakey even a word?

  24. I saw something similar on Martha Stewart so pat yourself on the back for being in a league with her! The lady on MS molded the cake/frosting mixture around a lollipop stick and then dipped in candy melt, mmmmm!
